Ingredients:
- 3 medium overripe bananas (approx. 340g)
- 1 large egg
- 1/3 cup melted coconut oil (80ml)
- 1 tsp vanilla extract
- 1/4 cup pure maple syrup (60ml)
- 1 cup all-purpose flour (125g)
- 1/2 cup unsweetened Dutch-process cocoa powder (45g)
- 1 tsp baking soda
- 1/2 tsp fine sea salt
- 3/4 cup dark chocolate chips 70% cacao (130g)
- 1 pinch flaky sea salt
Instructions:
- Preheat your oven to 180°C and line an 8x8 inch square baking pan with parchment paper, leaving an overhang on two sides for easy removal.
- In a large mixing bowl, mash the overripe bananas using a fork or potato masher until they reach a smooth, liquid consistency with minimal lumps.
- Whisk the melted coconut oil, egg, maple syrup, and vanilla extract into the banana puree until the mixture is well-combined and appears glossy.
- Sift the cocoa powder, flour, baking soda, and fine sea salt directly into the bowl. Using a silicone spatula, gently fold the dry ingredients into the wet base until no white streaks remain.
- Fold in 1/2 cup of the dark chocolate chips. Transfer the batter to the prepared baking pan and spread evenly.
- Sprinkle the remaining chocolate chips and a pinch of flaky sea salt over the top. Bake for 35 minutes, or until a toothpick inserted into the center comes out with just a few moist crumbs.
