Ingredients:
- 1 lb ground beef (85% lean)
- 1/4 cup almond flour or panko breadcrumbs
- 1 large egg, beaten
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup bourbon whiskey
- 1/4 cup low-sodium soy sauce
- 1/3 cup organic brown sugar
- 2 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- 1 tsp Sriracha or red pepper flakes
Instructions:
- Combine the ground beef, binder (almond flour or panko), beaten egg, and seasonings in a bowl. Mix gently to avoid a tough texture.
- Roll the mixture into 1-inch spheres.
- Sear the meatballs in a hot pan for 2 minutes per side until a brown crust forms.
- In a saucepan, combine bourbon, soy sauce, brown sugar, vinegar, and mustard. Simmer over medium heat for 5–7 minutes until reduced and caramel-like.
- Place seared meatballs into a slow cooker and pour the reduced glaze over them.
- Cover and cook on Low for 4 hours until the sauce is a glossy, mahogany coating.
