Ingredients:

  • 1 lb ground beef (85% lean)
  • 1/4 cup almond flour or panko breadcrumbs
  • 1 large egg, beaten
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup bourbon whiskey
  • 1/4 cup low-sodium soy sauce
  • 1/3 cup organic brown sugar
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp Sriracha or red pepper flakes

Instructions:

  1. Combine the ground beef, binder (almond flour or panko), beaten egg, and seasonings in a bowl. Mix gently to avoid a tough texture.
  2. Roll the mixture into 1-inch spheres.
  3. Sear the meatballs in a hot pan for 2 minutes per side until a brown crust forms.
  4. In a saucepan, combine bourbon, soy sauce, brown sugar, vinegar, and mustard. Simmer over medium heat for 5–7 minutes until reduced and caramel-like.
  5. Place seared meatballs into a slow cooker and pour the reduced glaze over them.
  6. Cover and cook on Low for 4 hours until the sauce is a glossy, mahogany coating.
