Ingredients:
- 3 lbs chicken wings, party-cut
- 1 tbsp baking powder
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 tbsp neutral oil
- 1/2 cup bourbon whiskey
- 1/3 cup honey
- 1/4 cup soy sauce
- 2 tbsp apple cider vinegar
- 3 cloves garlic, minced
- 1 tbsp brown sugar
- 1/4 tsp cayenne pepper
Instructions:
- Pat the chicken wings completely dry with paper towels to remove excess moisture.
- In a large bowl, toss the wings with neutral oil, baking powder, salt, and pepper until evenly coated.
- Arrange the wings in a single layer on a wire cooling rack set over a rimmed baking sheet.
- Preheat oven to 425°F (218°C) and bake for 35–40 minutes, flipping the wings halfway through, until deep golden-brown and crisp.
- While wings are roasting, combine bourbon, honey, soy sauce, apple cider vinegar, minced garlic, brown sugar, and cayenne pepper in a saucepan.
- Bring the sauce to a boil over medium-high heat, then reduce to a simmer for 8–10 minutes until the liquid reduces by half and becomes a syrupy glaze.
- Remove wings from the oven and immediately toss them in a bowl with the warm bourbon glaze.
- Return the glazed wings to the oven under the broiler for 2–3 minutes until the sauce bubbles and caramelizes.
