Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 tsp (5g) baking powder
  • ½ tsp (3g) salt
  • ¾ cup (180ml) warm water
  • 2 tbsp (30ml) olive oil
  • ½ cup (120ml) thick pizza sauce
  • 2 cups (225g) shredded low-moisture mozzarella cheese
  • ¼ cup (25g) freshly grated Parmesan cheese
  • 1 tbsp (15ml) extra virgin olive oil
  • 1 tsp (2g) dried oregano
  • Fresh basil leaves

Instructions:

  1. In a large bowl, whisk together the flour, baking powder, and salt. Stir in the warm water and 2 tbsp of olive oil until a shaggy dough forms. Knead on a floured surface for 2 minutes until smooth but soft, then divide into two equal balls.
  2. Preheat oven to 450°F (230°C) and line a baking sheet with parchment paper. Roll each dough ball into an oval shape, approximately ¼ inch (6mm) thick.
  3. Brush the edges of the dough with olive oil. Spread ¼ cup of sauce over each base, leaving a ½ inch border. Top evenly with mozzarella, Parmesan, and dried oregano.
  4. Bake on the center rack for 10–12 minutes until the edges are deep golden brown and the cheese is bubbling with occasional charred spots.
