- 16 oz frozen sweet peas, thawed and drained
- 4 large hard-boiled eggs, chopped
- 6 slices cooked bacon, crumbled
- 1/2 cup red onion, finely diced
- 1 cup sharp cheddar cheese, cubed small
- 1/4 cup sweet pickle relish
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tbsp apple cider vinegar
- 1 tsp sugar
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions:
- Ensure hard-boiled eggs are completely chilled before chopping. Drain frozen peas in a fine-mesh strainer and pat them dry with a paper towel to remove excess moisture.
- In a medium whisking bowl, combine the mayonnaise, sour cream, apple cider vinegar, sugar, salt, and black pepper. Whisk vigorously until the mixture is smooth and glossy.
- In a large mixing bowl, combine the drained peas, chopped eggs, crumbled bacon, diced red onion, and cubed cheddar cheese.
- Pour the dressing over the combined ingredients and use a rubber spatula to gently fold everything together until evenly coated, taking care not to break the eggs.
- Cover and refrigerate for 1 hour to allow flavors to meld before serving.
