Ingredients:

  • 16 oz frozen sweet peas, thawed and drained
  • 4 large hard-boiled eggs, coarsely chopped
  • 6 slices thick-cut bacon, cooked until crispy and crumbled
  • 1/2 cup red onion, finely diced
  • 1 cup sharp cheddar cheese, cubed into small pieces
  • 1/2 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 1 tbsp apple cider vinegar
  • 1 tsp honey
  • 1/2 tsp salt
  • 1/4 tsp cracked black pepper

Instructions:

  1. Thaw the frozen peas under cool running water and place them in a fine-mesh strainer. Press firmly with a spoon to remove all excess moisture. Chop the hard-boiled eggs, cooked bacon, and red onion into uniform, bite-sized pieces.
  2. In a small bowl, whisk together the mayonnaise, Greek yogurt, apple cider vinegar, and honey until the mixture is velvety and smooth. Stir in the salt and black pepper.
  3. In a large mixing bowl, combine the drained peas, chopped eggs, crumbled bacon, diced onion, and cheddar cheese cubes. Pour the dressing over the ingredients and gently fold together using a rubber spatula to keep the egg yolks intact.
  4. Cover the bowl with plastic wrap and refrigerate for at least one hour to allow the flavors to meld and the dressing to thicken.
