Ingredients:
- 16 oz frozen sweet peas, thawed and drained
- 4 large hard-boiled eggs, coarsely chopped
- 6 slices thick-cut bacon, cooked until crispy and crumbled
- 1/2 cup red onion, finely diced
- 1 cup sharp cheddar cheese, cubed into small pieces
- 1/2 cup mayonnaise
- 1/4 cup plain Greek yogurt
- 1 tbsp apple cider vinegar
- 1 tsp honey
- 1/2 tsp salt
- 1/4 tsp cracked black pepper
Instructions:
- Thaw the frozen peas under cool running water and place them in a fine-mesh strainer. Press firmly with a spoon to remove all excess moisture. Chop the hard-boiled eggs, cooked bacon, and red onion into uniform, bite-sized pieces.
- In a small bowl, whisk together the mayonnaise, Greek yogurt, apple cider vinegar, and honey until the mixture is velvety and smooth. Stir in the salt and black pepper.
- In a large mixing bowl, combine the drained peas, chopped eggs, crumbled bacon, diced onion, and cheddar cheese cubes. Pour the dressing over the ingredients and gently fold together using a rubber spatula to keep the egg yolks intact.
- Cover the bowl with plastic wrap and refrigerate for at least one hour to allow the flavors to meld and the dressing to thicken.
