Ingredients:

  • 16 oz extra-sharp Cheddar cheese, hand-grated
  • 1 cup mayonnaise
  • 4 oz drained pimentos
  • 1 tsp Worcestershire sauce
  • 1/2 tsp smoked paprika
  • 1/8 tsp cayenne pepper
  • 1/4 tsp kosher salt
  • 1/4 tsp freshly cracked black pepper

Instructions:

  1. Grate the extra-sharp cheddar using the large holes of a box grater and place the shreds into a large mixing bowl.
  2. In a separate small bowl or directly over the cheese, combine the mayonnaise, Worcestershire sauce, smoked paprika, cayenne, salt, and pepper. Stir until the spices are fully incorporated.
  3. Add the drained pimentos to the cheese, pour the seasoned mayonnaise over the top, and gently fold the ingredients together with a rubber spatula until the cheese is evenly coated.
