Ingredients:
- 16 oz extra-sharp Cheddar cheese, hand-grated
- 1 cup mayonnaise
- 4 oz drained pimentos
- 1 tsp Worcestershire sauce
- 1/2 tsp smoked paprika
- 1/8 tsp cayenne pepper
- 1/4 tsp kosher salt
- 1/4 tsp freshly cracked black pepper
Instructions:
- Grate the extra-sharp cheddar using the large holes of a box grater and place the shreds into a large mixing bowl.
- In a separate small bowl or directly over the cheese, combine the mayonnaise, Worcestershire sauce, smoked paprika, cayenne, salt, and pepper. Stir until the spices are fully incorporated.
- Add the drained pimentos to the cheese, pour the seasoned mayonnaise over the top, and gently fold the ingredients together with a rubber spatula until the cheese is evenly coated.
